The Inspiration
Owner Robert de Varona grew up in Cuba in the 40s and 50s and wanted to create a destination dining experience similar to the restaurants and nightclubs of that era. Varona's features authentic Cuban dishes with a dash of American and Continental favorites. Appetizers are available in the bar, as well as complete meals, and our signature beverage is the mojito!

The Space
Cost of building and improvements: nearly $5,000,000. There are 10,000 square feet of restaurant space and 4,000 square feet of office space. The main dining area seats 72; the Mojito Bar seats 60; outdoor seating capacity is 120. The Capablanca Room, a private dining area named after famed Cuban chess player, seats 60 and is equipped with A/V components for meetings and presentations. The Capablanca Room’s outdoor pergola is a cigar smoking area, and our custom-designed humidor features a wide selection of cigars for purchase.

Specially commissioned art work by local painter Matias Longoria and internationally known artist Xavier Cortada. Bar top collage created by local artist Rick Otoupalik. Custom metal work is by Kevin Marchetti of Renaissance Man and custom glass work is by Lou Mitchell Courtney of Elements Architectural Art Forms.
